Johnny Test
You may not know it, but Johnny Test is a total ripoff of Dexter's Laboratory. Though, as opposed to the sister breaking into her brother's lab, it's the brother breaking into his sister's lab.
Monsters, Inc
This, believe it or not, is a ripoff of Nickelodeon's "Ahhhh! Real Monsters", though it isn't exactly a ripoff. I think they may have actually improved the show a bit.
